Spicy Smoked Spare Ribs
Yields: 4 Servings

Ingredients

1 Rack Spare ribs St Louise Cut trimmed


Instructions
Sprinkle with a light coat of your favorite rub.
Start cold in a cold smoker.
Cook at 225 for 4 hours check tenderness with tooth pick.
If needed, cook another 1/2 – 1 hour.
Remove from smoker and let rest covered on cutting board for 1/2 hour.
